Kale'n Burrito


Who doesn't love kale? Now wrap it up in a tortilla with some tasty toppings and bam you have a Kale'n Burrito!

Ingredients:

2-4 Large Burrito Tortillas

1 bunch of kale, chopped and stems removed

1.5 cups of cherry tomatoes, sliced in half

1 can of white beans rinced

2-4 teaspoons of red wine vinegar

1 avocado

FYH Cream Cheese

Lemon Pepper

Olive oil

Garlic salt

Vegetable Oil

Directions:

Preheat oven to 400

Toss your halved cherry tomatoes with a drizzle of olive oil and a sprinkle of garlic salt

Place onto a cookie sheet

Bake for 20-25 minutes

Shake pan half way through

In a large sauce pan heat a little olive oil over medium high heat

Add in your kale and sauté for 3 minutes

Toss with vinegar and a dash of garlic salt

Remove from heat

Be careful not to overcook the kale, you want it to be lively

Remove tomatoes from oven, allow to cool

Prepare your burritos

Spread a generous amount of cream cheese onto the center of your tortilla

Top with white beans and a few avocado slices

Sprinkle with lemon pepper

Top with kale followed by cherry tomatoes

Roll up your burrito

Heat 1 tablespoon of vegetable oil in frying pan

Add in you rolled burrito seam side down

Fry on each side for 2-3 minutes until golden

Continue with remaining burritos
