'Sausage,' Kale and Mushroom Pasta


Sometimes a good hearty pasta is all you need to start off a busy week! Fuel for the mind body and soul. And it's tasty too!

Ingredients:

8oz mushrooms, sliced

1 bunch of kale, chopped

4-6 garlic cloves, minced

1 package of Lightlife Gimme Lean Sausage

1/2 cup Earth Balance butter

1-2 cups of Louisiana broth, or Chickenless Broth with a little cayenne pepper

1/3 cup nutritional yeast

Garlic pepper

Salt and pepper

Olive oil

1 tbl White wine vinegar

1/4 cup almons/soy milk

1/4 cup Ms Vegan Parmesan, recipe below

Penne pasta

Directions:

In a large frying pan add a little olive oil

Heat over medium high heat

Add in your mushrooms and 4 minced garlic cloved

Saute for 5-7 minutes

Add in your chopped kale

(add in more oil if needed)

Saute for an additional 5 minutes

Season with salt

Remove from pan and set aside

In the same pan add a little more oil and return to heat

Crumble in your sausage

Cook until browned and crumbled

Remove from pan

Using same pan return to heat and add in your butter

Once melted add in remaining minced garlic

Slowly pour in your broth

Bring to a slight boil

Add in your vinegar

Stir in your milk and nutritional yeast

Season with salt and garlic pepper

Turn heat to simmer

While sauce is simmering prepare your noodles

Once noodles are cooked, drain and add to sauce

Stir in your veggies, sausage and parmesan

Mix well

Season with more salt and pepper if needed

Continue to simmer for 5 minutes

Serve and Enjoy!

Ms Vegan Parmesan

In a food processor blend together:

1 cup of cashews

1/3-1/4 cup of nutrional yeast

1 teaspoon of garlic salt
