Garlic Onion Tortilla Cake

Inspired by the ever so AWESOME Guy Fieri. Words cant even begin to explain how amazing these are!! Happy to turn such an incredible dish into one that Vegans can enjoy!


Ingredients 15-20 cloves of garlic Olive Oil Vegetable oil 2 large red onions diced

4-5 tablespoons earth balance butter 2 tablespoons sugar 1.5 cups Follow Your Hear Mozzarella

1/4 cup FYH Vegenaise or vegan sour cream 3 tablespoons fresh cilantro chopped

Salt and pepper to taste Twelve 8-inch flour tortillas 2 tablespoons balsamic vinegar


Directions

Roast your garlic in olive oil over low heat

Cook for 10 minutes or until garlic easily dissolves in your fingers

Remove from heat and chop finely

Sauté your onion in roughly 1/3 cup vegetable oil over medium-high heat for 5-7 minutes

Add in your butter and sugar, cook for an additional 20-25 minutes, stirring often

Add your Garlic, Vegenaise, FYH cheese, cilantro and salt and pepper

Remove from heat and place into a bowl to cool, cover

Allow to cool for at least 4 hours in the refrigerator

Once cooled reserve roughly ½ cup of the sauce for dipping later

Evenly distribute the sauce on top of 11 tortillas

Placing 1 tortilla on top of the other after adding sauce

Place the 12th tortilla on top

Press down firmly

Cover with Saran wrap and place in the refrigerator overnight

Once 12- 24 hours have passed remove from fridge

Cut the stack into 14-16 wedges

Heat your pan and spray with cooking spray

Place your wedge cut side down onto your pan

Cook until brown, flip and brown the other cut side down

Repeat until all are brown

Add your balsamic vinegar to reserved dipping sauce, mix well

Serve wedges with sauce and enjoy!
