Mexican Mac N' Cheese


Just when you thought mac and cheese couldn't get any better....

Ingredients:

16oz of Elbow Macaroni

12 oz of Soyrizo

1/2 red onion, diced

2 tomatoes, diced

1 red bell pepper, diced

1 cup of cooked corn

1/3 cup of salsa verde

2 package of Daiya Cheese Sauce

1-2 tbl of Earth Balance Butter

(For topping: 1 avocado diced and 1 tomato diced)

Directions:

In a medium frying pan add a little oil

Add in your onion and cook down for 3-5 minutes over medium high heat

Add in your soyrizo and cook until starting to brown roughly 10-15 minutes

Add in your tomatoes butter and bell pepper, cook down for 2-3 minutes

Add in your salsa and corn, cook for 3-5 minutes

Turn off heat

Cook your macaroni according to directions in a large pot, reserve 1/2 cup water

Drain and return to your pot

Add in your cheese sauce and mix well, add in pasta water if too thick

Once cheese is mixed in well, add in your soyrizo mix

Mix well

Season with salt and pepper and nutritional yeast!

Top with avocado and fresh chopped tomatoes

Serve and enjoy,
