BBQ Zucchini Boats




Delicious roasted zucchinis stuffed with BBQ Vegan Grounds and Vegan Cheese! Great way to liven up your weeknight meal!


Ingredients

Roughly 4-5 Zucchinis, cut in half lengthwise and inside scrapped out

1/2 onion, diced

1 red bell pepper diced

12oz of Vegan Ground Meat

1/2-1 cup of BBQ Sauce, we used Kinders Mild BBQ Sauce

1/2 cup of Vegan Yellow Cheese Shreds

1/2 cup of Vegan White Cheese Shreds, plus 1/3 cup

Olive oil

Salt and pepper

Chopped green onions for garnish



Directions

Preheat oven to 375

Brush zucchini with olive oil

Season with salt

Place into baking pan

Cook in preheated oven for 15-20 minutes

Heat a large non stick pan to medium heat

Add in a little oil

Add in your onions and saute for 5 minutes

Add in your bell pepper and cook for another 2 minutes

Crumble in your vegan ground meat

Once starting to brown season with salt and pepper

Add in a little bbq sauce, roughly 1/3 cup

Add in your cheese

Turn off heat

Let cool for 5-10 minutes

Drizzle your zucchini boats with bbq sauce

Spoon your meat mix into zucchini boats on top

Drizzle with more bbq sauce

Top with remaining white cheese

Bake in preheated oven for another 15-20 minutes

Remove and garnish with green onions
