A delicious pasta with the flavors of all things corn elote. We have roasted corn, jalapeño, vegan mayo, vegan sour cream and seasonings tossed together with some pasta to create this refreshing and flavorful dish! Perfect for summer time!
Ingredients
1-2 tbsps vegetable oil
16oz roasted corn
2 jalapeños diced
1 bunch of cilantro
Salt
3/4 cup vegan Mayo
3/4 cup vegan sour cream
1/3 cup lemon or lime juice
1 tsp paprika, plus more for garnish
2 tsps chili powder
1 cup vegan feta
12-14 oz cooked pasta noodles
Directions
Heat oil to medium in a deep skillet or pot
Add in you corn
Sauté for 5 minutes
Add in you jalapeño, reserving half for garnish
Cook for 2 mins
Season with salt
Add in your paprika and chili powder
Mix well and cook for 2-3 mins
Add in your cooked pasta
Followed by your vegan sour cream and vegan Mayo
Add in your lemon or lime juice and a handful of cilantro
Mix well
Cook for 5 minutes
Stir in your vegan feta
Turn off heat
Plate and garnish each bowl with paprika, jalapeño, vegan feta and cilantro
Serve and enjoy!
