Cowboy Breakfast Sandwiches (vegan)


When I saw Ree Drummond aka Pioneer Woman make these Cowboy Sandwiches, I knew I had to make a vegan version. The sandwich consists of Sausage, Egg, Cheese, Jalapenos, on Golden and Buttery Texas Toast spread with Mayo!



Ingredients

Texas Toast or thick bread slices

Just vegan egg

1 Jar pickled jalapenos

Vegan Sausage Patties, thawed

Vegan American Cheese slices

Vegan butter

Vegetable oil



Directions

Heat a large non stick skillet over medium high heat

Add in roughly 1/2-1 tbsp of your butter

Add in your texas toast and toast on each side until golden

Remove and repeat with more butter and bread

Remove toast and set to side

In the same pan add a little oil and heat to medium high

Take your thawed vegan sausage patties and press down to form a thin larger patties

Place into heated pan and bake on each side until browned

Remove from pan and set aside

Return pan to heat

Add your jarred jalapenos to very hot pan

Cook until starting to char, roughly 2 minutes

Remove and set aside

In the same pan keep heat to medium high

Add in your Vegan egg (We used 1 1/2-2 containers of just egg to make 4 sandwiches)

Cook, stirring often until scrambled

Press scrambled eggs down into pan

Top your eggs with cheese slices

Sprinkle in a little water then cover until cheese has melted

Using a firm spatula cut out sandwich size squares



Build sandwiches

Spread your toast with vegan mayo

Top with your sausage, egg with cheese, and jalapenos

Top with your top toast

Cut in half

Serve and enjoy!
