Easy Lentil And Potato Soup

A delicious soup that’s super easy to make and comes together in less than 45 minutes. It’s packed with flavor. Perfect hearty meal for you and the family!


3 tbsps vegan butter

1 onion, diced

4 celery stalks, diced

1 rounded cup of diced baby carrots

2 garlic cloves, minced

2 cups of chopped potatoes, petite gold

1 1/4 cups of dried lentils

8 cups of vegan broth*

14.5 oz can diced tomatoes

2 tbsps Italian seasoning

1-2 tsps garlic salt

Fresh parsley

*a lot of pre made broths aren’t extremely flavorful. When I use a pre-made broth I usually add in extra bouillon seasoning to the liquid


Heat your butter over medium in a large/deep pot

Add in your onion and celery

Sauté for 5 minutes

Add in your garlic and potatoes

Add in your carrots

Cook for 5 more minutes

Add in you lentils, tomatoes and broth

Mix well

Bring to a boil

Season with Italian seasonings and garlic salt

Cook stirring often for roughly 35-40 minutes until vegetables are tender

Turn off heat

Add in a handful of parsley

Serve each bowl with parsley garnish

Serve and enjoy!
