GF Peanut Butter Oatmeal Chocolate Chip Cookies



These sensational cookies are Gluten Free, delicious, super easy to make and contain only a handful of simple ingredients.


One of the main ingredients of these cookies I'd like to focus on is Sprouted Rolled Oats by One Degree Organics.

Ingredients

1 cup of Creamy Peanut Butter

2/3 cup of Dark Brown Sugar or Regular Brown Sugar

1 1/2 rounded cups of One Degree Organics Sprouted Rolled Oats

1 tsp of baking soda

1 Bobs Red Mill Vegan Egg, prepared

4 oz of apple sauce

1/2 cup Vegan friendly chocolate chips, plus 1 cup vegan friendly chocolate chips for bottom of cookies



Directions

Preheat oven to 350

In a small-medium bowl mix together your oats and baking soda

In a large mixing bowl add your vegan egg, apple sauce, peanut butter, and brown sugar

Using a hand mixer mix on medium until all ingredients have mixed together smoothly

Add in your oat mix and stir with a spoon

Fold in 1/2 cup chocolate chips

Form roughly 1 1/2 inch balls and place onto prepared baking sheet

This will be sticky, if too sticky throw in a few more oats

Repeat with remaining cookie dough

Bake in preheated oven for 12-15 minutes until edges are starting to brown

Carefully remove and cool on a wire rack

Once cookies have cooled let's melt some chocolate

This is the way I like to melt chocolate but feel free to melt whichever way you prefer

Fill a small pot with roughly 1 inch of water.

Position a heat-proof bowl over pot and turn heat to medium (water should not touch bowl). Add your chocolate chips to bowl

Stir occasionally until melted

Remove from heat

Carefully place the bottom of your cooled cookies into the chocolate to coat the bottom

Using two forks carefully remove the cookie

Place onto wax paper or parchment paper to harden

Repeat with remaining cookies

Place into refrigerator until ready to serve

Enjoy!
