A unique twist on potato salad, inspired by jalapeño poppers!
Ingredients
3 lbs of red Potatoes, cut into chunks
8oz vegan cream cheese
1/2 cup vegan Mayo
1/2 cup diced jalapeño (fresh or pickled)
1/2 cup diced red onion
1/2 cup yellow vegan cheese shreds
Sliced fresh jalapeño for garnish
1/3 cup vegan bacon bits, plus more for garnish
2-3 tbsps chives, plus more for garnish

Directions Bring a pot of salted water to a boil Add potatoes Boil until very tender Drain In a large bowl add your cream cheese, vegan Mayo, and a pinch of salt Mix well Stir in your vegan cheese shreds Add in your warm and tender potatoes Mix well, it’s good to mash a few potatoes as you mix Stir in your vegan bacon bits, red onion, jalapeños and chives Mix well Refrigerate for at least 1 hour Remove and plate Garnish with more vegan bacon bits, jalapeño slices and chives Enjoy!
