Latke Burger

Here is a revamped version of my Beyond Latke Burger recipe. Making delicious potato latkes with red potatoes and leaving the skin on. Then using them as buns to make a delicious Latke Burger! This recipe also has the addition of what I now refer to as MsVegan Special Sauce. Similar to a Thousand Island but using Capers instead of relish, it's so delicious.


And for anyone who isn't familiar with Latkes. Latke is Yiddish for Pancake. Latkes, or potato pancakes, are a traditional Jewish dish that hailed from Eastern Europe. They have become associated with Hanukkah because they are fried in oil, and oil is symbolic of Hanukkah.

Ingredients

3-4 cups shredded potatoes ( you can use peeled russets or red potatoes and peel with skin on)

1 prepared Follow Your Heart Egg or roughly 3 tbsp of Just Vegan Egg

1-2 tbsp of flour

1 cup Vegan Shredded Cheese

1 rounded teaspoon salt

Few pinches of pepper

4 Burger Patties, we used Beyond Meat Beyond Burgers

Follow Your Heart Smoked Gouda Slices

Oil for frying

Topppings of choice (MsVegan Sauce, is a fun one recipe below)

Directions

Rinse your shredded potatoes

Soak your shredded Potatoes in cold water for 20 minutes

Rinse and repeat

After second soak drain and dry

Squeeze dry with dish towel 1-2 times to remove as much water as possible

Place into a large mixing bowl

Add in your Vegan egg, flour and shredded cheese

Season with your salt and pepper

Mix well, if too wet sprinkle in a little more flour

Heat roughly 1/2 inch thick oil in a frying pan

When oil is hot take a large round scoop, roughly 1/4-1/3 cup of potato mix

Place into hot oil and flatten down with back of spatula

(Latkes should be a little less than 1 inch thick and 2-3 inches wide, depending on what size bun you want)

Cook in oil for 3-5 minutes on each side, don't touch it until you're ready to flip

Done when golden and crispy on each side

Remove and drain on cooling rack or paper towels

Continue with remaining potatoes, adding more oil as needed

Should make 6-8 Latkes

Form your burgers to the size of your latke buns

Cook your Burgers according to directions

At the end place cheese slices on the burger

Cover and allow to melt

Plate burgers

Place one latke down for bottom bun

Top with sauce of choosing

Add your cooked cheesy beyond burger

Add on any toppings and then your top latke bun

Serve and enjoy



MsVegan Special Sauce


Ingredients

1 cup of Vegenaise

1/4 -1/3 cup of ketchup

2-3 tbsp of chopped cappers

1 tsps of liquid from capers

Pinch of sugar

Pinch of salt


Directions

Combine ingredients

Marinate in refrigerator for 1 hr before serving
