One Pot Caprese Pasta


A delicious Caprese inspired pasta cooked together in one pot. Super easy, super delicious and done in less than 30 minutes!


Ingredients

1/2 onion, diced

3 garlic cloves, minced

Olive Oil

2 rounded cups of cherry tomatoes

1/2 cup of tomato sauce

4 cups of broth (vegetable or vegan chicken/beef)

16oz of pasta of choice

Salt and pepper

1 Tbsp of Dried Italian Seasonings

8-10oz of soft vegan mozzarella, we used Miyokos and broke into small pieces

1 cup of basil plus more for garnish

1/2 tbsp crushed red pepper

Balsamic Glaze



Directions

Heat a large stock pot to medium

Add in a little oil

Once hot add in your onion

Sauté for 3 minutes

Add in your garlic and sauté for an additional minute

Add in your tomatoes, tomato sauce and broth

Season with a little salt and pepper

Stir in your Italian seasonings

Once it starts to boil add in your pasta

Mix well to make sure noodles are covered, if needed add in more broth

Cover and cook until noodles are al dente

Remove lid and stir

Noodles should be done and most liquid should be absorbed

Turn off heat

Add in your vegan mozzarella chunks (reserve some for garnish)

Then add in 1 cup of basil and crushed red pepper

Mix well

Plate

Top each plate with a little mozzarella, basil and drizzle with balsamic glaze

Serve and enjoy!
