Ingredients Olive oil, roughly 1 tbsp 1/2 onion, diced 2 tbsps minced garlic 2 yellow squash, sliced 2 zucchini’s, sliced 10 oz whole cherry tomatoes 4 cups vegetable broth 3 tbsps vegan butter 1 tbsp Italian seasoning 1 tsp crushed red pepper Salt and pepper 1/4 cup lemon juice 1/4 cup nutritional yeast 1/4-1/2 cup vegan Parmesan
Directions Heat a large pot to medium Add in olive oil Add in your onion and sauté for 5 mins Add in your garlic and cook for an additional minute Add in your squash, zucchini, tomatoes, pasta and broth Mix well, making sure pasta is covered in broth Cover and cook until pasta it al dente Remove cover Add in your Italian seasonings, crushed red pepper and season with salt and pepper Mix well Add in your butter and mix until melted Add in lemon juice and nutritional yeast Mix well Sprinkle with vegan Parmesan Serve and enjoy
