Sheet Pan Chicken Nachos



Delicious vegan chicken nachos cooked on a sheet pan, topped with the perfect mix of flavors. This is sure to please your family and friends! Perfect for the upcoming Summer holidays!


Ingredients

8oz vegan chicken

1 oz taco seasoning pack

1/3 cup water

Vegetable oil

15oz can of black beans, drained and rinsed

2.25 oz can of olives, drained and rinsed

3-4 cups of shredded Vegan cheese

1-2 cups of chopped tomatoes

Pickled jalapenos

Freshly chopped cilantro

Limes

Guacamole

Vegan Sour Cream



Directions

Preheat oven to 350

Heat a medium non stick pan to medium

Add in a little oil

Once hot add in your vegan chicken pieces

Cook for 5 minutes turning often

Sprinkle in your taco seasoning and water

Cook for 5-7 minutes until most liquid is absorbed

Remove from pan

Place tortilla chips evenly onto baking sheet

Careful not to overcrowd or over layer

Sprinkle with a little more than half of your cheese

Top with seasoned chicken

Sprinkle with remaining cheese

Evenly add your black beans and olives

Place into preheated oven and bake for 15 minutes

You can also broil for 1 minute before removing from oven

Remove from oven

Top with pickled jalapeños, tomatoes and cilantro

Add a large spoonful of guacamole and sour cream to the center

Serve and enjoy!
