A delicious hearty orzo with vegan chicken and sun-dried tomatoes. And it all comes together in less than 20 minutes.
Ingredients
8.5oz jar sun-dried tomatoes in oil
8-12oz of vegan chicken, we used Daring Foods
12oz cooked orzo
1/2 cup of freshly chopped basil, plus more for serving
1/2 cup of vegan feta, plus more for serving (We used Follow Your Heart)
Salt and pepper
Directions
In a large frying add the oil from the jarred sun-dried tomatoes
Heat to medium
Add in your vegan chicken
Cook, turning often for roughly 8-10 minutes
Add in your garlic and cook for 2 more minutes
Add in your sun-dried tomatoes and cook for 1-2 minutes
Add in your cooked orzo
Mix well
Season with salt and pepper
Turn off heat
Add in your basil and feta
Mix well
Serve with basil and feta garnish
