Taking nachos to a new level using crispy won tons as chips and topping them with all things sushi! Best part is……No fish were harmed in the making!
Ingredients
Vegan friendly won ton wrappers
3-4 Roma tomatoes
1/4 cup of rice vinegar
1-2 tbsps soy sauce
1-2 cups Cooked sushi rice
Chopped cucumbers
Diced avocado
Green onion
Vegan friendly oyster sauce or hoisin sauce works too
Dynamite sauce (recipe below)
Sesame seeds
Vegetable oil
Directions
Heat a large pot of water
Once boiling add in your tomatoes
Cook for roughly 60 seconds until skin starts to crack
Don’t overcook
Remove and place into ice water
Carefully remove the skin
Cute into small pieces, I like to remove the core
Whisk together your rice vinegar and soy sauce
Add your chopped tomatoes and mix well
Marinate in the fridge for 30 minutes
Prepare your nacho chips
Heat a good amount of oil in a large pot
Cut your won ton wrappers in half to create 2 triangles, like chips
Place into hot oil
Cook, flipping halfway, until golden
Remove and repeat with remaining won tons/chips
Place chips onto serving plate
Top with sushi rice
Add your cucumber
Drain tomatoes from liquid and add on top of cucumber
Add your diced avocado
Drizzle with oyster sauce and then dynamite sauce
Sprinkle with sesame seeds and green onion
Serve immediately

Dynamite sauce
Mix together 1/2 cup of vegan Mayo with 2 tbsps sriracha and 1 tsp of sugar
