Taco Bell Mexican Pizza

Today we are making a vegan version of Taco Bell's infamous Mexican Pizza.

(Makes 4)


8 Small to medium size flour tortillas

12-16 oz of vegan ground meat, we used Beyond Meat

Taco Bell seasoning packet

Vegetable Oil

Oil Spray

15oz can of Red Enchilada Sauce

2-3 cups of Mexican Style Vegan Shredded Cheese, we used Daiya

2 cups of chopped tomatoes

14oz can of vegan friendly refried beans


Preheat oven to 375

Cook your Vegan grounds in a non stick pan with a little oil

Add in your taco seasoning and cook according to packet directions

Remove from pan

Place your flour tortillas onto baking sheet

Spray with oil

Flip and spray again

Pierce each tortilla with fork

Place into oven and bake for roughly 10 minutes until golden

Remove and let cool to touch

Take one tortillas and spread evenly with refried beans

Top evenly with seasoning grounds

Place second tortilla on top

Add a good amount of enchilada sauce

Sprinkle with top with your cheese

Lastly add your diced tomatoes

Place into the oven and broil for 3 minutes until cheese has melted

Be careful to not forget as it can burn quickly!

Remove, serve and enjoy!
