Waffle Breakfast Tacos

Today we are making breakfast tacos using waffles instead of tortillas. This recipe is so simple and put together in less than 10 minutes!


6-8 Frozen vegan friendly waffles

3-4 cups of Scrambled vegan eggs (I like to add in a little cheese while scrambling)

8-12oz of vegan breakfast sausage, cooked and cut into small pieces (We used Beyond Meat)

Maple Syrup

Skewer sticks


Preheat oven to 350

Place your waffles onto a plate, one layer

Microwave for 30 seconds so they thaw out

Carefully fold waffle into taco shape

Place your skewer stick into each end to hold the shape

Place into baking dish

Repeat with all waffles

Bake in preheated oven for 5-7 minutes until cooked

Remove from oven

Remove stick from waffles

Plate your waffles

Add in your vegan sausage and vegan scrambled eggs

Drizzle with maple syrup

Serve and enjoy!
