Ingredients:
3 potatoes
2 onions, chopped
1 rounded cup of beyond meat grillers, cooked and chopped/shredded
1 cup of FYH Mozzarella Shreds
1/3 cup of Nutritional Yeast
Salt
Pepper
4 tbls of Earth Balance Butter
1/3 cup non-dairy milk
Directions:
Wash and chop your potatoes
Place into a pot with water and bring to a boil
Allow to boil until tender
Drain and mash
Add in your 2-3 tbl of butter and your milk
Season salt and pepper, set aside
Preheat oven to 450
In a medium frying pan add your remaining butter and your onions
Saute until caramelized, turning often
Season with salt
Once onions are caramelized add them to your potatoes
Mix well
Stir in your nutritional yeast, mozzarella shreds and chopped grillers
Mix well
Spary a mini muffin pan with tons of cooking spray
Using a spoon place a spoonful of mashed mix into mini muffins
Bake in preheated oven for 30-45 minutes’
Remove and let sit for 5-10 minutes before removing
Serve
These can vary, the muffins should start to brown and form into firm muffins
