BBQ Chicken Nachos Flour Tortilla Chips

These BBQ Chicken Nachos are everything you want in an easy comfort food dinner! Crispy homemade flour tortilla chips piled high with smoky BBQ chicken, gooey melted cheese, fresh toppings, and plenty of flavor in every bite.

Making your own tortilla chips takes just a few extra minutes, but it completely transforms these nachos. They’re perfectly crispy, sturdy enough to hold all the toppings, and absolutely worth it!


Ingredients

Flour tortillas cut into small triangles 

Avocado oil spray

Salt

12-16oz vegan chicken pieces, cooked and shredded

BBQ Sauce

7oz vegan cheese shreds

Jalapeño, diced (optional)

Toppings: pickled red onions** and cilantro 


Directions

Preheat oven to 400

Spread flour tortilla triangles onto a baking sheet

Spray with oil

Season with salt

Bake in preheated oven for 6-10 minutes until golden and crispy*

Remove from oven and keep oven on

Mix your chicken with bbq sauce

Move chips around on plate 

Sprinkle with cheese

Top with chicken and jalapeños if using 

Return to oven and cook until cheese has melted 

Roughly 5 minutes

Remove and top with cilantro and pickled red onions

**Pickled red onions


Ingredients

1 red onion sliced 

1/2 cup apple cider vinegar 

1 tbsp white sugar 

Pinch of salt 

1 cup hot water 


Directions

Place your onions inside a jar with lid 

In a medium bowl whisk together remaining ingredients 

Whisk until sugar is dissolved 

Pour over onions into jar Making sure onions are submerged 

Cover and let sit for one hour 

Use after 1-2 hours or refrigerate until ready to use
