Double Chocolate Zucchini Bread

If you think zucchini doesn’t belong in dessert, this Double Chocolate Zucchini Loaf will change your mind! It’s incredibly moist, rich, fudgy, and loaded with melty chocolate in every bite. The zucchini keeps the loaf soft and tender without adding any vegetable flavor, making this the perfect recipe for chocolate lovers.


Ingredients

1 1/2 cups all purpose flour

1/3 cup unsweetened cocoa powder

1 tsp baking powder

1/2 tsp baking soda 

Pinch of salt

2/3 cup buttermilk (2/3 cup milk mixed with 1-2 tbsps apple cider vinegar)

1 cup sugar

1/2 cup vanilla yogurt 

1/3 cup vegetable oil

1-2 cups shredded zucchini, liquid removed

1/2-1 cup of chocolate chips


Directions

Preheat oven to 350

Mix together your flour, cocoa, baking powder and baking soda

Whisk well and set aside

In another large bowl add your sugar, yogurt, oil and buttermilk

Whisk well

Pour in flour mixture

Mix well

Fold in your zucchini

Then fold in your chocolate chips, reserving a handful for top of loaf

Pour into prepared loaf pan

Top with chocolate chips

 Bake in preheated oven for 45-60 minutes

Toothpick should come out almost clear when ready

Remove and let cool for 10-15 minutes

Slice, serve and enjoy
