Sheet Pan Asparagus Caprese



Hands down one of my new favorite dishes to make. Delicious roasted asparagus topped with melted cheese and roasted tomatoes. Drizzle with balsamic glaze and basil! YUM!!! Ingredients 1 bunch of asparagus, washed and trimmed 8-10oz of cherry tomatoes, cut in half 8-10oz of soft vegan mozzarella 1/2 cup of vegan Parmesan Olive oil Salt Balsamic glaze Handful of fresh basil

Directions Preheat oven to 425 Spread your asparagus evenly on half of your sheet pan Add your halved tomatoes to other half of pan Drizzle or brush with olive oil Season with salt Bake in preheated oven for 15 minutes Remove from oven Top asparagus with your mozzarella Sprinkle Parmesan evenly on top Place back in oven for 10-15 minutes until cheese is melted You can also broil for 2 minutes or so until cheese has melted Remove from oven Plate Add a spoonful of your cheesy asparagus to a plate Top with roasted tomatoes Drizzle with balsamic glaze Garnish with basil Serve and enjoy
