Enchiladas are a Mexican food staple. Skip the tortillas and throw it all in some rice! The flavors blend together so perfectly in this simple but tasty dish.
Ingredients:
1.5 cups uncooked rice, cooked according to directions
15oz can of corn
15oz can of seasoned black beans
2 tomatoes, chopped
1 small white onion, chopped
3 garlic cloves minced
½ wedge of Daiya Cheddar , shredded
1 cup of Daiya mozzarella shreds
1 can of red enchilada sauce
½ cup of salsa verde
Garlic salt
Pepper
½ teaspoon of Cayenne Pepper
2 teaspoons of cumin
1 teaspoon of chili powder
1-2 tablespoons of Olive oil
Directions:
In a large frying pan add your onion and olive oil
Saute for 3-5 minutes over medium-high heat
Add in your garlic and cook for 1-2 minutes
Stir in your cayenne pepper, cumin, and chili pepper
Add in beans, corn, rice, and tomatoes
Stir to mix well
Add in your enchilada sauce and salsa verde
Mix well
Season with salt and pepper
Turn off heat and add in your cheese
Cover and let sit for 5 minutes
