Balsamic Sage Sausage Bites ....These bad boys will make your mouth water! Packed with flavor. They have flavors of balsamic, sage, spicy mustard and apricot and it all comes together in a magical way.

Ingredients
1 onion , diced
28oz of vegan ground sausage
3 Tablespoons of chopped fresh sage
½ cup of Balsamic vinegar (good quality)
1 cup of Apricot Preserves
1/3 cup of spicy brown mustard
1/2 rounded cup of breadcrumbs
1/2 tsp garlic salt
Olive oil
Vegetable oil
Directions
Pre heat your oven to 375
Sauté your onion in 1 tablespoon of olive oil over medium heat, until translucent
Add in your vinegar, cook until reduced by half
Turn heat to low and add in your mustard and apricot preserves.
Mix well, sauce should be glossy and brown
In a medium bowl mix your sausage, breadcrumbs, sage, garlic salt, and 3 tablespoons of balsamic sauce that you just prepared
Mix with hands and form into bite size balls
Place onto prepared baking sheet
Brush with vegetable oil
Cook for 25 minutes, shaking pan a few times during cooking
Balls should be evenly golden/brown
Serve with dipping sauce. Feel free to use toothpicks or forks
You will have extra sauce, I like to use for a marinade/sauce for a future me-eat/tofu dish
