My favorite part of a muffin is the top so today we are making just the tops of a banana muffin with delicious crumble topping.
Ingredients
2 very ripe bananas
3 tbsps melted butter
1 vegan egg replacer, we used 2-3 tbsps just vegan egg)
1/2 tsp baking soda
1/2 cup white sugar
3/4 cup flour
Pinch of salt
Muffin top pan
Crumble
1/2 cup flour
1/2 cup brown sugar
4-6 tbsps softened butter
Mix flour and cinnamon together
Add in softener butter
Using a fork mix to form crumbs
Directions
Preheat oven to 350
Prepare your crumble per directions above Refrigerate until ready to use
In a medium bowl add your bananas
Mash really well
Add in your butter and continue mashing until creamy and no lumps
Add in your vegan egg and sugar mix well
Add in your flour, baking soda and salt
Mix well, but don’t over mix
Grease your muffin top pan
Place roughly 1/4 cup scoop or less into each muffin top
Sprinkle top of each one with a generous amount of crumble mix
Softly press the crumble into the muffins
Bake in preheated oven for roughly 16-18 minutes until golden
Remove and cool
Serve and enjoyÂ
