Blueberry Crumble Yogurt Cake

This blueberry crumble yogurt cake is soft, moist, and packed with juicy blueberries in every bite 🤤✨ The yogurt makes it extra tender while the buttery crumble topping adds the perfect crunch!
Cake Ingredients
1 1/2 cups all purpose flour
3 tsps of baking powder
1 cup non dairy vanilla bean yogurt
2/3 cup white sugar
1/3 cup plain vegetable oil
1-2 cups frozen blueberriesÂ
Powdered sugarÂ
Crumble topping ingredients
1/2 cup flour
3 tbsps white sugar
3 tbsps brown sugarÂ
5-6 tbsps softened butterÂ
DirectionsÂ
Preheat oven to 350
Make your topping
Mix together the flour and sugars
Add in butter crumbleÂ
Set aside
Line a pan with parchment paper and spray with oil
In a medium large bowl add your yogurt, sugar and oil
Whisk until creamy
Add in your flour and baking powderÂ
Mix well
Fold in blueberries
Pour into prepared pan
Spread evenly into the pan
Top with crumble toppingÂ
Bake in preheated oven for roughly 30-35 minutes minutes until golden and toothpick comes out clean and top is golden
Remove and cool slightly
Top with powdered sugarÂ
