Healthy Protein Muffins

Soft and fluffy high-protein muffins are made with silken tofu, peanut butter, and oat flour for a healthy, plant-based treat that actually keeps you full. No eggs, no dairy, no protein powder. Just simple ingredients packed with protein and perfect for breakfast, meal prep, or a quick snack.
Ingredients
14-16oz silken tofu
1/4-1/2 cup non dairy milk
1/4 cups oil
1/4 cup apple sauce
1/2 cups peanut butter
1/3 cup peanut butter powder
2 cups oat baking flour
1 tsp baking powder
1 tsp baking soda
Punch of salt
3/4 cup coconut brown sugar
1/2-3/4 cup white chocolate chips
1/2 cup chopped nuts of choice
Directions
Preheat oven to 350
Blend together your tofu, 1/4 cup milk and oil until creamy
Should only take a few spins
Pour into large bowl
Add in your apple sauce, peanut butter peanut butter powder and sugar
Mix well
Add in your oat flour, baking soda, baking powder and salt
Mix
Don’t over mix
Fold in your nuts and chocolate chips
Pour into prepared muffin pan
Bake in preheated oven for roughly 18 minutes
Remove and cool
Serve and enjoy!
