
A delicious crispy egg roll full of southwestern flavors.
Ingredients
1 1/2 cups cooked vegan chicken pieces
1/2 red onion
1 cup corn
1 cup of black beans
1/2 red bell pepper chopped
1/2 orange bell pepper chopped
1 jalapeño chopped
1 tsp cumin
1/2 tsp chili powder
1/2 tsp paprika
1 tsp garlic powder
Salt and pepper
2-3 cups of vegan cheese shreds
Vegan friendly egg roll wrappers
Oil
Directions
In a large bowl add first 11 ingredients
Season with salt and pepper
Add in your cheese
Mix well
Lay out one egg roll wrapper
Fill the center, fold in sides and roll up
Using fingers dip into water and wet the edges to seal
Place onto air fryer basket
Brush or spray all sides of egg roll with oil
Air fry at 350 for roughly 10-12 minutes
Flipping once at the last few minutes
Remove once golden
Serve with salsa of choice, vegan sour cream is good too
You can also bake or fry these in oil.
