Easy Apple Samoas

Everyone’s favorite Girl Scout cookie, Samoas, but easily made and served on an apple! One of my new favorite treats!


1 1/2 cups sweetened shredded coconut

1/2-1 cup of peanut butter

Roughly 1/3-1/2 cup of chocolate chips

2 apples


Preheat oven to 350

Spread your coconut evenly onto prepared baking sheet

Bake in preheated oven for 8-10 minutes stirring frequently until golden

Remove and cook

Slice your apples

Remove the core of apples to form a ring

Spread tops with peanut butter

Sprinkle top of peanut butter generously with coconut, pressing down the coconut so it sticks

Place your chocolate chips into a small/medium microwaveable bowl

Microwave in bursts of 20-30 seconds, stirring in between until creamy

Place into piping bag, or use a zip lock and cut small corner out of bottom

Drizzle on top of coconut

Place into refrigerator for 15-20 minutes to harden the chocolate

Serve immediately and enjoy
