These Street Corn Jalapeño Poppers are cheesy, spicy, creamy, and seriously addictive! 🌽🔥 Fresh jalapeños stuffed with a creamy street corn filling, loaded with cheese, and baked until perfectly golden. The ultimate appetizer for parties, game day, BBQs, or anytime you want a crowd favorite snack.


If you love Mexican street corn and jalapeño poppers, this recipe combines the best of both worlds into one insanely delicious bite


Ingredients

Jalapeños, sliced in half seeds removed

8oz vegan cream cheese

1/4 cup vegan mayo 

1 cup vegan cheese shreds

1/4 cup vegan bacon bits

1 rounded cup of roasted corn 

1/4 cup crumbled vegan feta cheese

Handful of chopped cilantro

Tajin

Garnish: cilantro, feta, limes, tajin

 

Directions

Preheat oven to 350

In a medium/large bowl add your cream cheese, mayo, and cheese shreds

Mix well

Add your corn, bacon, feta, cilantro and tajin

Mix well

Spread into jalapeño halves

Place on prepared baking dish

Bake in preheated oven for 20-25 minutes until cheese is melted and bubbly

Remove

Garnish with cilantro, feta, tajin and limes

Serve with dipping sauce of choice
