Spinach And Artichoke Butter Beans

This creamy spinach & artichoke butter beans recipe is the ultimate cozy, high-protein plant-based meal. Inspired by classic spinach artichoke dip, this dish is rich, garlicky, and comes together in one pan. Perfect for an easy weeknight dinner.


Using buttery beans, tender spinach, and flavorful artichokes, this recipe is completely dairy-free but still ultra creamy and satisfying. Serve it with crusty bread, over rice, or enjoy it straight from the pan!


Ingredients

1/4 cup butter

2 tbsps minced garlic or 2 garlic cloves minced

1 can of artichoke hearts, drained and roughly chopped 

12 oz frozen spinach prepared 

2 14.5 oz cans of butter beans

Salt and pepper

1 tsp crushed red pepper

1 cup broth

4oz of vegan cream cheese

3/4 cup mozzarella

1/2 cup Parmesan

1/4 cup nutritional yeast

Toasted bread for serving 


Directions

Heat a medium/large pan over medium high heat

Add in your butter

Once melted add in your garlic and cook for 1 minute

Add in your artichoke and butter beans 

Mix well

Add in your broth

Mix well and cook for 5-7 minutes 

Season with salt and pepper

Add in your crushed red pepper

Mix well

Add in your spinach and cream cheese

Mix until cream cheese is melted

Add in remaining cheeses and nutritional yeast

Cook and stir until cheese is melted 

If too thick add in more broth

Remove from heat and serve 

Enjoy!
