A fun, crunchy, and yummy finger food!
Ingredients
Roughly 3 cups of chicken substitute chunks (You can use Beyond Meat or make your own seitan)
Oil for frying
1st dip mix
1 cup water
1 cup flour
1 tablespoon cornstarch
1 tablespoon of mustard
2nd Dip Mix
1 cup flour
1 cup cornmeal
1/4 cup nutritional yeast
1 teaspoon baking powder
Directions:
In one bowl mix your 1st mix ingredients together
In a second bowl mix your 2nd mix ingredients together
Heat your oil, roughly 2 inches high
Dip each chicken piece into the 1st dip mix
Shake off excess batter
Dip into the 2nd mix, press firmly to cover well
Place into the hot oil and fry for roughly 5 minutes
Drain on a paper towel lined plate
Serve with favorite dip and enjoy!
Seitan
Seitan Ingredients:
2 cups Vital Wheat Gluten
1/4 cup nutritional yeast
2 tablespoons of flour
Pinch of Salt
1 teaspoon onion powder
1/2 teaspoon garlic powder
2 cups water
1 tablespoon chicken flavor
2 tablespoons of soy sauce
1 tablespoon molasses
1 tablespoon olive oil
Other Ingredients:
6-8 cups Vegetable broth
3 tablespoons chicken flavor
1 tablespoon garlic
Directions:
In a large bowl mix together your dry seitan ingredients
In a medium bowl mix together your wet ingredients
Make a large hole in the middle of your dry ingredients
Slowly pour in your wet ingredients
Using a fork carefully combine the wet and dry ingredients
When it becomes too tough to mix with fork use your hands
Kneed for roughly 3-5 minutes until it becomes a firm dough
Divide dough in half, then each half in half again
Continue until you reach roughly 8-10 pieces, depending on what size you want
Stretch each piece and from into 'Chick'n' patties
Bring a large pot of water, chicken flavor to a boil
When water is boiling add in your garlic
Turn heat down to a simmer so it's not rolling
Add in your chicken cutlets
Place a lid partially on to allow steam to escape
Allow to cook for roughly 45 minutes
Watch the water/heat, it shouldn’t get back to boiling
Turn off heat, allow to cool in water or remove pieces to use right away
You can store what you dont use in its broth in a container
