Twice Baked Spaghetti Squash

Hearty Spaghetti like your Italian Grandma made but without the calories and with extra love!


3 spaghetti squash's

1 26oz jar of pasta sauce of choice

3 garlic cloves, minced

12oz of crimini mushrooms, chopped

1 bag of Daiya Mozzarella Shreds

Olive oil


Preheat oven to 400

Cut squash in half and remove meat/seeds

Brush with olive oil

Place meat side down onto cookie sheet

Bake for 45 minutes until tender to touch

Let sit for 10 minutes to cool before handling

Prepare your sauce

Sauté your mushrooms in olive oil over medium high heat

Cook for 5-8 minutes

Add in your garlic and cook for an additional 2 minutes

Pour in your pasta sauce and cook for 5 minutes

Turn off heat, stir in your cheese, reserving 1/3 for top

Remove spaghetti with fork, scrapping inside

Place into sauce mix, mix well

Spoon back into squash

Place back into oven for 10 minutes

Turn on broiler for 2 minutes, until cheese is bubbly and starting to brown

Remove and serve
