Taking everyone’s favorite marry me chicken recipe and turning it into a soup!
Ingredients
8.5 oz jar of Sundried Tomatoes in oil
1/2 onion diced
2-3 tbsps minced garlic
1 tbsps Italian seasoning
Salt and pepper
1/2 tbsps crushed red pepper
8oz vegan chicken pieces
8oz vegan cream cheese
1 cup non dairy milk
4-5 cups broth
1 bouillon cube
8oz noodles of choice, we used shells
3-4 tbsps tomato paste
1 cup of chopped basil, plus more for serving
1/2 cup vegan Parmesan, plus more for serving
1/2 cup vegan mozzarella shreds
8oz baby spinach leaves
Directions
Heat a large pot to medium
Add in the oil from jar of tomatoes
Add in your diced onion and garlic
Saute for 5 minutes
Add in your chicken and sundried tomatoes
Cook for an additional 5 minutes, stirring often
Season generously with salt and pepper
Add in your Italian seasoning, crushed red pepper, bouillon cube, basil, tomato paste and milk
Mix and cook for 2-3 minutes
Add in your broth
Bring to a boil and add in your noodles
Cook stirring often until noodles are done
Add in your cream cheese, Parmesan, mozzarella and spinach
Mix and cook until cheese has melted
Serve with fresh basil and Parmesan
