Chick-no, Broccoli and Cheese Potato


If you ever have a hard time getting your loved ones to eat Broccoli, serve them up this dish. How could you not enjoy broccoli when its served alongside 'chicken', potatoes, and cheese!!!!!!

Ingredients:

2 Large Russet Potatoes, cooked and cut in half

1 package of Beyond meat Chicken Grillers

1 head of broccoli, steamed or 1 bag of frozen broccoli steamed

1 tablespoon chicken less flavor

1/3 cup of water

1 package of Follow Your Heart American Shreds

1/3 cup of Vegan Bacon Bits

2 tablespoons nutritional yeast

Earth Balance Butter, Roughly 1 cup

¾-1 cup of Almond milk

Cayenne Pepper

Salt

Pepper

Directions:

Cook your potatoes either in oven or microwave

Cut in half, lengthwise

Take your potato halves and scoop out all the meat

Place into a large bowl

Mix in roughly ½ cup softened butter, ½ cup milk, and nutritional yeast

Season with salt and pepper

Set aside

Preheat oven to 375

In a small sauce pan add your chicken less flavor and water

Mix well and cook over medium-high heat

Add in your grillers

Once grillers are warm turn heat to low-medium

Remove a few grillers at a time and chop into bite size pieces

Return pieces to sauce pan

Cook for 5 minutes turning often

Turn off heat and remove from sauce pan

Chunks will soak up water as they cool

Cook broccoli and allow to cool

Add your griller chunks and broccoli to your potato bowl

Add in vegan bacon bits and cayenne pepper (use as much as you like, I used ½ teaspoon)

Mix well

Stir in half your bag of shreds

Fill each potato skin generously with your potato mix

Place onto greased cookie sheet

Bake in preheated oven for 20 minutes

Check halfway through, if starting to dry out, drizzle with 2 tablespoons of melted butter

While potatoes are cooking make your cheese sauce

Melt 1 tablespoon of butter in your small sauce pan over medium heat

Add in 1-2 tablespoons of milk

Stir in remaining cheese

Cook until melted

If consistency is too thick stir in more milk

When potatoes are done, remove from oven, plate and drizzle with cheese sauce
