American Chop Suey



Very similar to everyone’s favorite beefaroni dish! A delicious pasta casserole with ground beef, bell peppers, onions and tomatoes! Rich and hearty, need I say more?


Ingredients

3 tbsps vegan butter

1/2-1 onion diced

2-3 tbsps minced garlic

1 green bell pepper, diced

12-16oz vegan ground meat

1 tbsps Italian seasonings

Salt and pepper

1-14.5 oz can of tomato sauce

1-14.5 oz can of diced tomatoes

1/4 cup of tomato paste

2 tbsps sugar

1/2 cup broth of choice

1 rounded cup of vegan cheese shreds of choice

1/4 cup of ketchup, optional but a game changer

16oz elbow pasta, cooked 

Greens for garnishing


Directions

Melt your butter in a large pan over medium high heat

Once

Melted add in your onion

Sauté for 3-5 minutes

Add in your garlic and bell pepper

Cook for 2-3 minutes

Add in you ground meat

Crumble and cook until starting to brown

Add in your Italian seasonings

Season very generously with salt and pepper

Mix well

Once meat is browned, add in your tomato sauce, diced tomatoes, tomato paste, sugar and broth

Mix well and cook for 3-5 minutes stirring often

Add in your cheese shreds and cooked pasta 

Mix well and cook for an additional 3-5 minutes until cheese has melted, taste and salt if necessary

This is when I like to add in ketchup

Adds the perfect amount of sweetness

Turn off heat

Garnish with greens

Serve and enjoy!
