Rosemary Stuffed Mushrooms


12-16 oz of Whole cremini mushrooms, stems removed and chopped*

1/2 sweet onion, finely chopped

1/2 package Beyond Meat Grilled Strips, chopped finely

1 tablespoons chicken-less flavor

2 tablespoon of chopped fresh rosemary

3 garlic cloves, minced

1/2 cup water

1 tablespoon of Earth Balance butter

1 tablespoon of flour

2-4 tablespoons of nutritional yeast

Salt and pepper

1 teaspoon of Paprika, more if you like it spicy

1/2 cup almond milk

Olive Oil

*You will only use half of the stems


In a large frying pan sauté your onion in olive oil over medium-high heat

Cook for 5 minutes

Stir in your garlic and mushroom stems and cook for an additional 2-3 minutes

Add in chicken and rosemary, mix well

Add in chicken-less flavor and water

Stir in your butter

Stir until butter is melted

After butter is melted stir in your flour

Whisk until thickened

Stir in 1/2 cup of milk

Stir in nutritional yeast, salt and pepper and paprika

Mix well

Turn off heat

Preheat oven to 375

Place your stem less mushrooms onto greased cookie sheet

Stuff each with a spoonful of mix

Bake in preheated oven for 20-25 minutes

Remove and let sit 5 minutes before serving
