These bad boys will make your mouth water!
(Inspired by Rachel Ray's Sage Sausage Bites)
Ingredients
1 onion , diced
2 packages of Light Life Vegan Gimme Lean Sausage
3 Tablespoons of chopped fresh sage
½ cup of Balsamic vinegar (good quality)
1 cup of Apricot Preserves
1/3 cup of spicy brown mustard
1/2 rounded cup of breadcrumbs
1-2 tablespoons of melted vegan butter
1 Tablespoon Olive Oil
1 Teaspoon Garlic Salt
Directions
Pre heat your oven to 375
Sauté your onion in 1 tablespoon of olive oil over medium heat, until translucent
Add in your vinegar, cook until reduced by half
Turn heat to low and add in your mustard and apricot preserves.
Mix well, sauce should be glossy and brown
In a medium bowl mix your sausage, breadcrumbs, sage, garlic salt, 3 tablespoons of balsamic sauce
Mix with hands and form into bite size balls
In a shallow foil lined baking sheet add your melted butter
Add in your balls and place dish into oven
Cook for 15-18 minutes
Shake pan or turn balls over every so often to get each side into the butter oil mixture*
Balls should be evenly golden/brown
Remove from oven and place onto paper towel to drain
Serve with dipping sauce. Feel free to use toothpicks or forks
You will have extra sauce, I like to use for a marinade/sauce for a future me-eat/tofu dish
*Since there isn’t much fat in the vegan sausage, important to get the balls into the butter/oil mixture.
