Oyster-Choke Rockefeller

The plant based version of the ever so fancy Oyster Rockefeller. But even fancier being that is Vegan!


2 whole artichokes, cooked

2 tbl of Earth Balance butter

1.5 cups chopped spinach

2 tbls of chopped garlic

1/3 cup Ians panko breadcrumbs

1/2 cup of FYH Mozzarella

Pinch of garlic salt, to taste

Pinch of Garlic pepper, to taste

2 tbls vegenaise

2 tbls of Nutritional Yeast

1 tsp white wine vinegar

Handful of fresh chopped parsley


Preheat oven to 400

Carefully remove the heart, reserve the leaves

Chop the hearts

In a large frying pan add 1 tbl of butter

Saute your garlic over medium high heat

After 3 minutes add in your spinach

Once spinach is wilted a bit turn off heat

add in remaining ingredients

Mix well

Grease a baking sheet

Add spoonfuls of mix onto the the bottom end of artichoke leaves

Place onto baking sheet

Melt remaining butter and brush the leaves with melted butter

Bake in preheated oven for 10 minutes, until bubbly

Remove and serve
