Bang Bang Chicken Skewers

The most delicious skewers! Seriously some of the best I have had in a while. I could just drink the sauce!
Ingredients
12-16oz vegan chicken pieces, thawed (we used daring foods)
1 rounded cup of vegan mayo
2/3 cup cup sweet chili sauce
1 tbsp sriracha
1 tbsp maple syrup
Wooden skewers
Chopped chives or green onions
Directions
Preheat oven to 375
In a medium bowl add your mayo, chili sauce, sriracha and maple syrup
Whisk until creamy
Place your thawed chicken pieces onto skewers
Place onto prepared baking sheet
Brush with sauce
Turn and brush other side with sauce so all sides are covered in sauce
Keep remaining sauce for dipping
Place in oven and bake for 20 minutes turning halfway through
Skewers should be brown and crispy
Remove and garnish with green onions
Serve with remaining sauce

Searing the Beef
Sear beef fillets on high heat for 2 minutes per side to form a golden crust. Let it cool before proceeding to keep the beef tender.

Mushroom Duxelles
Cook the mushrooms until all moisture evaporates to prevent soggy pastry. Aim for a thick, paste-like consistency.

Puff Pastry Handling
Keep the puff pastry cold to avoid softness. Chill if it becomes too soft, and score the top lightly without cutting through.
