These tacos are packed with flavor. Each bite leaves you wanting more!
Ingredients:
12oz Soyrizo
1 15oz can of black beans, rinsed
2 Sweet Potatoes, peeled and diced
Olive oil
Vegetable Oil
2 Ripe Avocados
Juice from 1 lemon
1 tsp garlic powder
Salt and Pepper
8oz Follow Your Heart Sour Cream
Paprika
Cilantro
Small Corn Tortillas
Directions:
Mash your Avocado
Mix with Sour Cream, garlic powder, Lemon juice, pinch of salt and pepper
Mix well
Marinate in fridge until ready for use
Preheat oven to 425
Toss diced sweet potato with a little olive oil
Place on baking sheet and bake for 30-35 minutes
Flipping halfway through
Remove when roasted, season with Salt and Pepper
In a large frying pan heat 1/3 cup of oil
Add in your soyrizo
Cook/Fry for 5-7 minutes
Drain oil, reserve oil for later
Add in your beans and cooked sweet potatoes
Cook for 2 minutes or so
Season with salt
Remove from pan, keeping as much oil that’s left in the pan
Return pan back to stove top
Using spatula scrap any excess of the bottom of pan
Mixed reserved oil with a dash of paprika
Add reserved oil back to your pan
Heat over medium-high
When hot add in tortillas
Using tongs or fork flip tortillas until drenched in oil, and red
Heat until a little crispy
Remove from oil and repeat
Make tacos
Place down tortilla
Add in a spoonful of soyrizo mix
Drizzle with avocado cream
Top with cilantro
Serve and enjoy
