Mexican Pizza

Ms. Vegan is busy mixing cultures again. This time, Italian and Mexican. Two of Americas most favorite foods! Is it a pizza?  Is it a Taco? It is tasty that's for sure!


1 package of Beyond Meat feisty beef crumbles

'Beef' Crumble seasoning: Dash of chili powder, salt, pepper, garlic powder, onion powder and cumin   

1-16oz can of vegetarian refried beans (you'll prob use half)

1/2-1 cup of salsa of choice

Follow Your Heart cheddar shreds

Follow Your Heart mozzarella shreds

1/2 red onion, chopped

2 tomatoes, chopped

1 bunch of cilantro, chopped

2 Crescent Rolls or other Pizza dough of choice

Optional (jalapenos, sour cream, olives)


Preheat oven to 375

In a medium pan cook crumbles according to directions, season with beefless crumble seasoning

In a small bowl heat up your beans and salsa

Press and seal your crescent rolls onto a greased pizza pan into shape of choice

(Form either a circle or square)

Spread your bean and salsa mix on top

Top with beef crumbles

Sprinkle generously with both types of cheese

Top with onions, tomatoes and half your cilantro

Bake in preheated oven for 20-25 minutes

Remove and top with remaining fresh cilantro

Feel free to add jalapenos if you want a little kick.

Slice and Serve
