Balsamic Blueberry and Tomato Grilled Cheese

Sounds crazy, tastes amazing! The colors and flavors are so vibrant!


Roughly 1 cup of frozen or fresh blueberries

3 tbls of sugar

1/3 cup of balsamic vinegar

1 cup of Cherry Tomatoes, sliced

Olive oil

Garlic salt and pepper

Follow Your Heart Mozzarella Shreds

Bread of choice

Earth Balance Butter

Cooking Spray


Preheat oven to 375

Toss your sliced tomatoes in a little oil, garlic salt and pepper

Place onto a baking sheet and bake until roasted roughly 15 minutes

Remove and let cool

Place your Balsamic and sugar into a small sauce pan

Heat over medium-high

When sugar has dissolved add in your blueberries

Bring to a boil

Let boil for 2 minutes and turn down heat

Let cook for 15-20 minutes stirring often and smashing a few of the blueberries with the back of your spoon

When most liquid has dissolved turn off heat

Let cool to thicken

Make your Sandwiches:

Butter one side of each bread slice

Place butter side down and add your blueberry mix

(Make sure your blueberry mix is thick, if not strain it through a strainer)

Top with tomatoes

Add cheese

(Trick: Microwave your cheese a bit before adding onto bread, then mash)

Top with top bread slice butter side up

Heat a non stick skillet over medium, spray with cooking spray

When hot place your sandwich down

Heat for 2-3 minutes until golden and carefully flip


Serve and enjoy!!!
