BBQ Tempeh Salad


This salad is so hearty and refreshing! It's one of those dishes that just make you feel good after you're finished!

Ingredients:

1 block of Tempeh

1 cup bbq sauce, store bought or spicy/tangy recipe below

1 package of prepared Cauliflower Rice

1 can of 14.5 oz corn

1 cup cherry tomatoes

1 cup of chopped cilantro

Salt and pepper

3-4 cups of fresh baby spinach

Avocado

Directions:

Preheat oven to 375

Chop your tempeh into chunks

Bring a pot of water to boil

Place tempeh into boiling water for 2-3 minutes

Remove and drain

Toss your tempeh with 1/2 of bbq sauce

Place on prepared baking dish/sheet

Bake for 20 minutes, stirring halfway through

Mix together the remaining ingredients into a large bowl, minus the avocado

Season with salt and pepper

Plate your salad

Top with BBQ Tempeh

Add sliced avocado on the side

Feel free to drizzle with more BBQ sauce

Serve and Enjoy

Spicy Tangy BBQ Sauce

Combine the following ingredients and bring to a boil, turn heat down and cook for 20 minutes stirring often

1/3 cup apple cider vinegar

1 cup ketchup

¼ cup water

½-3/4 cup brown sugar

2 tbl molasses

1 rounded tbl mustard

2-3 garlic cloves, minced

1 tsp garlic powder

1-2 tsp of cayenne pepper
