Strawberry Shortcake Ice Cream Bars

Talk about bringing it back to childhood. These Ice Cream bars taste like those ice cream bars from the local ice cream truck when we were a kid!

Ingredients:

18-20oz of Vanilla Cookie Sandwiches, we used Golden Oreos

1-2 cups frozen strawberries

2-3 tbl of Melted Butter

2 pints of softened Dairy Free Strawberry Ice Cream

1.5 quart glass loaf pan

Saran Wrap

Directions:

Take your saran wrap and make one piece two times as long as the pan

Place into the center of pan so that two sides are hanging over

Take another piece of saran wrap twice as wide as the pan

Place into the center so that the two sizes are hanging over

In a food processor add roughly 18-20 cookies

Process until crumbled

Mix in your melted butter and process a few times

Remove and press firmly into glass pan

Place into freezer for 10 minutes to set

Spread your ice cream evenly ontop of cookie base, press in firmly

Place into freezer for 5 minutes, optional

Add roughly 8 cookies process until finely crumbled

Remove and set aside

Add your frozen strawberries to the food processer

Process until finely crumbled

Add in your cookie crumbles

Sprinkle on top of ice cream

Take each overlaying saran wrap and fold over the ice cream

Place into freezer for at least an hour before serving
