Blackened Cauliflower Tacos


With a Pineapple Salsa....it might not get any better than this! The savory of the cauliflower mixed with the sweetness of the pineapple salsa is the perfect combo!

Ingredients:

2 heads of Cauliflower, cut into small florets

3 tbl of Blackened Seasoning, homemade or store bought

Roughly 1 tbl of vegetable oil, or more

1 cup of chopped pineapple

Ā½ red onion diced

1 bunch cilantro chopped

3 tomatoes, diced

3-4 mini peppers (orange and red) diced

2 limes juiced

Corn Tortillas

Directions:

Preheat oven to 400

Whisk your seasoning and oil in a large bowl

You want to create a paste, add more oil if too thick

Add in your florets

Toss and place onto prepared baking sheet

Bake in preheated oven for roughly 30 minutes

Turning halfway through

Remove and turn on broiler

Place under broiler for roughly 3-5 minutes

While cauliflower is cooking make your salsa

Coming your pinapple, onions, tomatoes, peppers, cilantro and lime

Mix well and place in refrigerator until ready to use

Heat your tortillas

Top with blackened cauliflower and your pineapple salsa

Serve and enjoy
