Kimchi Fried 'Chicken' Sliders


Wow, talk about packed full of flavor. There is so much going on in one little slider. Using thawed Gardein Scallopini that have been molded into thick patties, battered and fried to perfection. Topped with a perfectly balanced spiced Kimchi and then a Sauce you will be licking off the plate. You definitely need this recipe in your life.

(Makes roughly 4 sliders)

Ingredients 1 1/2 cups of all purpose flour

2 rounded tbsps Cornstarch

1/2 tbsp of Chicken seasoning

1 tsp of paprika

Dash of: Garlic powder, onion powder, pepper

1.5 cups of Unsweetened almond milk

1 tbsp of apple cider vinegar

3 tbsp of Follow Your Heart Vegan Egg

1 cup of cold water

Nasoya Spicy Vegan Kimchi

1 small cucumber, sliced thin

1 package of Gardein Chicken Scallopini, Thawed

Small buns, We used Alfaro's Artesano Bakery Buns

1/2 cup of Follow Your Heart Vegenaise

1-2 tbsp of Seoul Kimchi Hot Sauce

High heat oil for frying

Directions

Mix roughly 1 cup of kimchi with your sliced cucumber

Mix well and place into refrigerator to marinate

Mix your Vegenaise and Hot Sauce together

Place into refrigerator until ready to use

Use 3 medium sized shallow bowls

In one bowl mix your Almond milk and apple cider vinegar to make a 'buttermilk'

In a second bowl add your flour, cornstarch, chicken seasoning, paprika, garlic powder, onion powder, and pepper

With a fork or whisk mix the dry ingredients together well

In a third bowl whisk together your cold water and follow your heart vegan eggs, until it has no clumps

Heat your oil in a medium sauce pan over medium high heat

While oil is heating up form your thawed cutlets into smaller but thick patties, circumference to match your slider buns

Dip your patties into the butter milk

Followed by the flour mix

Then into the vegan egg

And back into the flour mix, pressing in firmly to fully coat

Repeat with remaining patties

Once all patties have been coated place 1 or 2 into the hot oil to fry

(Don't over crowd the pan)

Should fry for roughly 3-5 minutes until golden brown, turning halfway through

Once cooked remove from oil and place onto wire cooling rack

(make sure to place something under the wire rack to catch the oil)

Repeat with remaining patties

Make Sliders

Spread a generous amount of your kimchi hot sauce mix onto the bottom and top bun

Place a cooked patty down

Top with your kimchi and cucumber mix

Place top bun on top

Repeat with remaining sandwiches

Serve and enjoy!
