Roasted Tomatillo Salsa


This recipe is so easy and delicious I will never buy store bought salsa again!

Ingredients

2lbs of Tomatillos, Peeled and rinsed

2 Jalapeno Peppers

1 large onion, cut into wedges

4 garlic cloves, roasted or not *(see below notes)

1 bunch of cilantro leaves

Juice of 1 lemon or 1 lime

2 tsps salt

Olive Oil

Directions

Fire up your grill (You can also do this in the oven at 450 for roughly 15 minutes, turning halfway through)

Toss your Tomatillos, onion, and jalapenos in olive oil

Place onto hot grill and roasted until starting to brown and vegetables are soft

Remove from grill and place tomatillos and onion into blender or food processor

Cut and remove seeds from jalapenos and add japaneos into blender (Leave in some seeds to make it spicier)

Add in your garlic

Blend until smooth

Add in your cilantro, lime or lemon juice and salt

Blend again until smooth

Tate and season with more salt and lime/lemon juice to your liking

Serve with Chips, Tacos or Burritos

Enjoy!

*You can also roast a whole head of garlic and reserve the rest for other dishes if you want to have roasted garlic
