Today we are taking an accidentally vegan cake mix, and adding in only two ingredients to make these super delicious muffins. We used spice cake mix and an apple. But these are versatile. You can use any cake mix you like with apple sauce and add in chocolate chips, nuts or any addition you like.

Ingredients

1 box cake mix

2 cups of apple sauce

1 large apple, peeled and chopped

Directions

Preheat oven to 350

Add cake mix to large bowl

Add in your apple sauce

Mix until creamy

Fold in your apple

Grease a muffin pan

Add in your muffin mix

Bake in preheated oven for 18-15 minutes until set (toothpick comes out clean)

Remove and let cool 5-10 minutes

Remove from pan

You can enjoy them as is or add a little butter or cream cheese to the top
