Pumpkin Butter Swim Biscuits

These Pumpkin Butter Swim Biscuits are warm, buttery, and bursting with cozy fall flavor! Made with simple ingredients and baked in a pool of melted butter, they come out perfectly golden, moist, and impossible to stop eating. The easiest fall breakfast or dessert—ready in minutes! 🍁✨
Ingredients
1 cup of pure pumpkin
1 1/2 cups vegan buttermilk*
1/3 cup sugar
1 tsp cinnamon or pumpkin spice
1 tsp vanilla
2 1/2 cups all purpose flour
1 1/2 tbsps baking powder
Pinch of salt
1/2 cup butter, melted
9x9 baking pan
1 cup chocolate chips, or more ;)
Icing (mix 1 cup powdered sugar with 2-3 tbsps milk)
*mix 1 1/2 cups of soy milk with 2-3 tbsps apple cider vinegar. Whisk well and allow to sit for a few minutes to thicken

Directions
Preheat oven to 400
In a medium bowl add your butter milk, sugar, pumpkin, cinnamon and vanilla
Whisk until creamy
In a large bowl add your flour, baking powder and salt
Whisk to incorporate baking powder into flour
Then pour in your pumpkin mixture
Mix until dough forms
Fold in your chocolate chips
Pour melted butter into your pan
Scoop batter into the melted butter
Evenly press dough into butter and pan
Take a butter knife and slide it around the dough and pan
Then cut into squares to help separate during baking
Bake in preheated oven for 30-35 minutes until toothpick comes out clean
And top is golden
Remove and allow to cool
Drizzle with icing
Serve and enjoy!
